1. Into a medium bowl sift flour, sugar, and salt. In a blender or food processor combine egg yolks, milk, and melted butter until smooth. Cover and refrigerate for 2 hours.
2. When ready to cook fritters, heat oil to 360°F to 375°F in a Dutch oven, heavy deep skillet, or other frying kettle. Meanwhile, beat egg whites to soft peaks; fold into chilled batter. 3. Dip fruit into batter and fry until golden (about 2 minutes per side). Serve immediately sprinkled with confectioners' sugar, granulated sugar, or cinnamon sugar, or drizzled with fruit sauce or melted preserves. Yield: 2 cups batter |
