Basic Fritter Batter for Fruit

IngredientsInstructions
1 cup flour
Pinch salt
2 tablespoons sugar
2 eggs, separated
½ cup milk
2 tablespoons butter, melted
Oil, for frying
Slices or pieces of fruit such as banana, pineapple, apple, papaya
Confectioners' sugar, granulated sugar, cinnamon sugar, fruit sauce, or melted preserves for topping
1. Into a medium bowl sift flour, sugar, and salt. In a blender or food processor combine egg yolks, milk, and melted butter until smooth. Cover and refrigerate for 2 hours.

2. When ready to cook fritters, heat oil to 360°F to 375°F in a Dutch oven, heavy deep skillet, or other frying kettle. Meanwhile, beat egg whites to soft peaks; fold into chilled batter.

3. Dip fruit into batter and fry until golden (about 2 minutes per side). Serve immediately sprinkled with confectioners' sugar, granulated sugar, or cinnamon sugar, or drizzled with fruit sauce or melted preserves.

Yield: 2 cups batter
